The IBA show is widely regarded as one of the most important bakery expos in the world – and so unsurprisingly the 12 awards handed out in the IBA Trophy give a strong indication of the direction of innovation in the industry.

Peter Becker, president of the German Bakers’ Confederation, talked to our sister news site FoodProductionDaily.com from the show floor about how sustainability and energy saving techniques are driving trends in the sector, how the industry is diversifying and where he thinks regional growth will be strongest.
